Garlic Smashed Potatoes serves 4

1 pound red potatoes, scrubbed
6 cloves peeled garlic
2 quarts water
1 tablespoon salt
1 tablespoon olive oil
1/4 teaspoon pepper
1/4 to 1/2 cup milk
2 tablespoons grated parmesan cheese
4 ounces soft silken tofu, drained
1/2 cup crumbled feta cheese
4 large basil leaves, sliced thin

Cut the potatoes into quarters, crush the garlic. Place them them in a large pot of salted cold water. Cover, bring to a boil, reduce the heat and boil gently for about 15 minutes, or until the potatoes are tender. Drain, then mash the potatoes and garlic. Add the remaining ingredients and mash well. Serve hot.
